There are quite a few methods to bake without eggs. The easiest and quickest way is to use Ener-G Egg Replacer. 1-1/2 teaspoons of Egg Replacer plus 2 tablespoons warm water equals one egg. It contains no eggs or egg derivatives, so it’s perfect for those who are allergic to eggs or vegans. It simply mimics what eggs do in a baking recipe. The main ingredients in Egg Replacer are potato starch, tapioca flour, leavening, cellulose gum and carbohydrate gum. It’s also gluten free, wheat free and contains no preservatives, artificial flavorings, sugar or cholesterol.

Ener-G Egg Replacer

This product is easily found in regular grocery stores. In Hong Kong, you can get it from Health Essential for HK$80 (US$10.20).

Making vegan baked goods is a breeze when you have Egg Replacer, Earth Balance Natural Buttery Spread and plant milk (e.g. soy, coconut, hemp, rice, almond).
